For the last day of the New York Food & Wine Festival, I observed a cooking demonstration with Tom Colicchio (restaurateur, famous chef and Top Chef judge).  Please enjoy these photos of Mr. Colicchio preparing the following: lemon confit, tomato confit, duck confit and a pork shoulder.
